HEALTHIER SWEET SPOT

Matcha Sugar Cookies

Bake in 9-12 minutes (depending on cookie size)

Preheat 350°

Tools you may need are a cookie sheet with silicone mat or parchment, a large bowl, a medium bowl, a whisk, and/or a wooden spoon

INGREDIENTS

  • 1/2 c vegan butter or 1/3 c coconut oil
  • 1/3 c coconut sugar or granulated
  • 1 flax egg or 1 egg
  • 1 tsp vanilla
  • 2 tsp matcha green tea powder
  • 1 c flour
  • 1/2 tsp baking power
  • 1/4 tsp salt
  • 2 tbsp granulated or coconut sugar *set aside to roll*

PREPARE

  1. Make your flax egg by combining 1 tbsp ground flax seed and 3 tbsp of warm water. stir gently until combined and let sit for 5 minutes or so. *Ignore if using an egg
  2. Cream butter and sugar in your large-ish bowl. add flax egg (or egg) and vanilla.
    • add matcha powder to combine
  3. In a medium bowl, add dry ingredients together and mix with a fork
  4. Gently mix dry ingredients into your matcha butter sugary goodness until combined.
  5. Use a cookie scoop for consistency. I used a 1.5 Tbsp scoop.
  6. Roll each cookie into granulated sugar before placing it on your cookie sheet
    • I slightly flatten each cookie to ensure an even bake

BAKE & TIPS

Bake at 350° for 9-11 minutes until cookies are risen and just soft in the middle. These don’t turn incredibly brown and will be a bit dry if over baked.
Let cool for a few minutes on the baking sheet before transferring… to your mouth. Or an airtight container.

This dough can be frozen (on the sheet first) after being scooped. Once the dough balls are mostly frozen, then transfer cookie dough balls into another freezer storage container. You can also freeze cookies after being baked.
